1 3/4 cups flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 beaten egg
3/4 cup milk
1/3 cup oil
In a mixing bowl, stir together flour, sugar, baking powder, and salt. Combine egg, milk, and oil in a separate bowl. Make a well in center of dry mixture. Pour in egg mixture and stir until moistened. Grease muffin tin. Bake in a 400F oven for 20 to 25 minutes or till golden. Makes 12 muffins.

In addition to the basic recipe, we added...

Banana Nut Muffins
We substituted the 1/3 cup oil with 1/3 cup applesauce and added...
2 tablespoons milk (in addition to)
1/2 cup mushed bananas
1/2 cup chopped nuts (we used macadamia nuts)
Mix ingredients as above in basic recipe. Add bananas and mix well. Fold in nuts.

Strawberry Muffins
This one is super easy and my kids loved it! Simply use the basic recipe and chop as many strawberries as you like and fold in at the end. I also added a little more milk because it seemed a bit dry.
