I do believe that blueberry muffins are just about one of my favorite muffins! I just love those juicy berries that seem to burst in your mouth! Here's an easy recipe that I've been loving lately...
2 cups flour
1/2 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 egg
6 tblsp. melted butter
1 cup blueberries
sugar to sprinkle on tops
Preheat oven to 400F*. Sift dry ingredients into a large bowl. Combine milk, egg, and butter. Stir into dry ingredients. Fold in blueberries. Spoon batter into greased muffin tin. Sprinkle the tops with sugar. Bake 20 minutes.*
*The original recipe says to preheat to 425 and cook for 25 min. That seemed too high and too long to me so I reduce both and they turn out fine!

I like homemade blueberry muffins fine, but have you ever had the ones at Souplantation? Oh my, I could make an entire three course meal out of just those! Do you suppose they're loaded with fat??! =)
Your temperature and time adjustments on this recipe sound smart. Better a moist muffin than a crunchy one!
Blueberry muffins are the best!
