I recently made beans and rice in the crockpot. I've made this tasty warm-me-up dish before but never in the crockpot. It tasted so much better! I can't believe I've never made them this way before! For our family of 4, I did this...
Soak 1/2 lb. of red beans overnight. In the morning, drain the water and put beans in the crockpot along with...
1 onion, chopped
1 bell pepper, chopped
2 garlic cloves, minced
bacon slices, cut up (turkey bacon is fine)
salt and pepper
I combined all of this with the beans and put enough water to go over the beans by 1 inch. Cook on low for 10-12 hours. Add salt and pepper to taste. These beans were delicious served over rice and with a side of cornbread!

That sounds tasty to me! I'll have to try that sometime. We can't get dried beans here, but we do get fresh beans - even better!
My go-to red beans and rice recipe is the "Caribbean Beans and Rice" from the More with Less cookbook. It has ingredients like lime and tomato in it, and I always add some cilantro. In fact, we just had it the other day and are eating up the leftovers now!
I've only ever cooked beans in the crockpot - the other ways seem too time-consuming. It's good to hear that the crockpot version tastes better, too! :)

I have a (possibly stupid) question. Did you cook the bacon before you put it in?
Delish!! The crockpot definitely does make a difference :) I haven't tried bacon, but I do fry up some kielbasa sausages and then stir them in with the beans as they cook. Mmm, craving some now!
Can I just say, I am printing this out right now!! We love red beans and rice, and the crock pot is one of my favorite kitchen items:)
