I used to think fish tacos did not sound appetizing. Obviously this was spoken by someone who had never tried them. Once I did, it was love at first bite. I had this recipe saved and finally got around to making it. It was incredibly good. I couldn't get enough of the chipotle lime dressing. All of this was perfect with a pile of freshly made corn tortillas. Serious, double yum. My only modifications were that I left out the vinegar in the marinade simply because I didn't have any. For the sauce, I used yogurt instead of sour cream and Adobo seasoning instead of Adobo sauce (I couldn't find the sauce).
